Bún bò Huế is a perfect reflection of this place—a spicy noodle soup infused with lemongrass, chili, and shrimp paste. Hoi An always feels like stepping into a different world, with its lantern-lit streets and ancient charm. Here, we savor cao lầu, a noodle dish distinct to this historic town. Made with water drawn from ancient wells and topped with pork, fresh herbs, and crispy noodles, each bite is a celebration of Hội An’s trading history. Sitting in a quiet corner of the town, enjoying this dish, I always feel a deep connection to the generations of cooks who’ve kept these traditions alive.

The Sweet Spirit of Southern Cuisine
In bustling Ho Chi Minh City, the food becomes a vibrant reflection of the city’s energy. Dishes like cơm tấm, or broken rice, showcase the resourcefulness and creativity of the south. What was once considered a humble ingredient has become a beloved staple. With grilled pork, pickled vegetables, and a fried egg, cơm tấm embodies the warmth and ingenuity of southern Vietnamese cooking.

When I think about why I started Vespa Adventures, I’m reminded of a dream my wife and I shared. “We created a tour to travel through Vietnam for seven days and discover new places and try all the foods offered in different regions.” This journey wasn’t just about satisfying hunger—it was about uncovering the stories, pride, and love infused in every bowl, plate, and bite of traditional Vietnamese food.
